This was easy to make (recipe says 10 minutes "active" and at most it took me 12 minutes), and it baked up nicely. I decided to try this recipe because I like ginger, and it calls for both dry ground ginger and grated fresh ginger. We could all taste the ginger and the pumpkin (even kids age 12 and 15 liked it). I also appreciated that the recipe only called for 1/3 cup oil and 1 egg, so its really fairly healthy.
