Terrific pot of beans! The quick soak method used here was very successful and produced tender beans in a fraction of the time. The broth was very tasty and I made sure not to cook too much off since it was so, so good. I did first saute my peppers, onions, and garlic along with 4 small oven roasted tomatoes before adding broth and beans and cooking for about 3 hours.
