I love apple pie but hate making pastry so I love discovering desserts with an apple pie type filling. This was a simple and homey dessert almost like eating upside down apple cake. I did not have applesauce on hand to use in the batter so had to use a cup of extra soy milk instead. It turned out just fine but I am curious to see how different it will be next time with the applesauce.
