I am a HUGE fan of scallops. My husband is "meh" about them. I made this dinner for my husband for our "At Home" Date Night. I made a couple of changes to this recipe, though. I didn't use the Prosciutto. For one, I didn't have any on hand, and it just didn't sound like a combo that I wanted. I didn't use the Pernod (c'mon Ina, like I keep a bottle of that on hand?). I have made this recipe several times and follow it exactly. Pernod lasts forever so it's nice to have a bottle on hand for this recipe. This is great for a crowd.
