Delicious and very fresh tasting lightly dressed salad where all of the flavours of the fresh herbs and dried spices come together to complement the beans.
I used a mix of dill and parsley in place of the chervil so there wasn’t an obvious licorice flavour even though there was some tarragon in the herb mix, and I toasted and ground the cumin and coriander seeds as I didn’t relish biting into them whole – especially the coriander. The only other adjustment I made was to reduce the salt as the process of frying the capers seems to concentrate their salty/briny flavour.
This is a great make ahead salad that holds up very well in the fridge for hours without losing its freshness. I think it would be wonderful served as a hot side dish.
