Ok, well this was my flagship recipie from this book... and it didn't disappoint. This is the book that was recommended to me from a well established chef in Boston/NY.

He said that he steals recipes from this regularly.

This recipie was hauntingly good. It was easy, fast and was so good that I felt like eating food/crack. I couldn't stop... it was unbelievable!!!

Try it tonight... easy.... too easy not to!!

I made this after reading all of the positive reviews here. It did not disappoint. So, so good! The lime with the corn was fabulous- as was the touch of cayenne. I did not use as much butter or cream as was called for and this was still unbelievably delicious!

This was unbelievable. We couldn't stop eating it, I wish I'd made more!

The lime juice and the cayenne transformed this into something unexpected and exciting. I will use less heavy cream, and a bit less butter next time so that those flavors don't overwhelm the lime, but overall it was an amazing dish.

I have never really made creamed corn, just a few times out of the can. This recipe is different, but good different. The addition of the sour lime juice and zest along with the cayenne pepper and chives really enhances the flavor of the end product. I served this on the side with roast chicken and it was a good compliment.

I did have some problems with some of the seasonings. I think I went a little too heavy on the lime juice. I wish the recipe included measurements for the lime zest and lime juice. I will have to be more careful and taste before seasoning next time.

Sweet and delicious - I made this as a side dish for a summer BBQ and it was very nice indeed. The lime is a great complement to the sweetness of the corn. I did only use a tiny bit of cayenne and didn't have any chives, so I didn't get the full taste of this - but with fresh corn and lime it was fantastic. I'll definitely make again now that corn is in season.

This recipe is also online at the James Beard Foundation site.

Can I please give this recipe 6 stars? It is truly an excellent, memorable recipe. The corn combined with the hint of lime and cayenne is a perfect summertime dish. It has sophisticated flavors, but is very easy to execute. The chives add a hint of color and a bit of kick. I plan on making this recipe again and again over the summer. I'm hooked.
