This was my daughter and my favorite thing from the Maya Angelou tribute meal and I plan on making it again. We loved the mashed avocado in the dressing. This needs to be eaten soon after making though as it losses a lot in sitting around.

This was the only item from my Maya Angelou Tribute meal that we didn't like. It was too dry for our tastes. I normally bake my corn bread at 500 F for 20 minutes. This recipe has you bake at 350 for one hour. I did only make 1/2 a recipe and took it...

This was the dessert I decided on for my Maya Angelou tribute meal. Moist and delicious. We really enjoyed this coconut cake. I liked the addition of coconut flavoring in both the cake and frosting.
