Piquant Chicken
Before we gave up chicken (at home) I used to make this often. Was one of my most favorite things to eat. Once again, has a bit of a Mexican taste. Flatten chix breast, dip in melted butter (add spices to the butter), fill center with cheese and chiles. Roll up, dip in butter, then bread crumbs/Parmesan. Bake. Ingredients: chix breasts, butter, green chiles, Jack cheese, Parmesan, chili powder, ground cumin, bread crumbs. Recipe includes a salsa recipe, but I've never found that it was needed.
