Coconut Cupcakes

These are so good. I make them every Easter. There is always a ton of frosting left over though. Probably the best cupcakes I've ever had.

These are a family favourite which I have had great success with many times.

These are rich,if I make them again I'd make them in mini pans.

A recipe I use again and again. I don't fill the cupcake tins as much as Ina does otherwise the muffin tops overflow which I don't particularly like. Delicious.

These are so easy and perfectly delicious. The cake is tender and not so sweet--since the icing is. Together they are perfect A coconut lovers dream.
