The filling of greens, herbs, and chickpeas is so delicious. I make the filling with my homegrown greens (usually Tuscan kale) and my own herbs, and usually add some lemon juice and some sumac to the mix. The pastry can be any kind, I usually use some homemade shortcrust pastry, and the resulting galette is so good. One of my all time favourite galettes.
