This is actually my favourite bread from the book and there are so many variations. For the grains, I’ve used oats, rolled barley, quinoa, 8 grain cereal. I did find my buckwheat groats a little too crunchy so I might grind them up a little next time. I made a pan loaf and reduced salt a little. Great bread!
