For a light lunch on Canada day (today) we decided on this dish. There is so much lettuce from the garden right now and this was an excellent way to use it. I made the dressing ahead of time and this was very easy and quick. We didn’t have the herbs so just made without and served it on rice noodles. My only other change was to add a little more brown sugar to the dressing. For the protein component I used some salt beef I had made earlier and it was great in this.
