I can't explain why I made this salad since the idea of pairing shrimp and Waldorf salad was not immediately appealing to me. But I love a good main dish salad (and there are four in this issue) and so I gave it a whirl and was very pleasantly surprised. It was really tasty and makes a perfect meal for a luncheon.
