I deconstructed this a bit - I cooked the chicken separately and made a sauce of the other ingredients. I used fish sauce instead of soy sauce, as suggested, and I used a bit less of it as it has a stronger flavor.

The result was very tasty, with a subtle Thai-like flavor. I will make this again.
