Ingredients:
  • 1 1/4 C unbleached all-purpose flour
  • 1 tsp baking powder
  • 3/4 tsp ground cinnamon
  • pinch salt
  • 3/4 C light brown sugar or natural sweetener, firmly packed
  • Egg replacer for 2 eggs
  • 1/4 C soy milk or other dairy-free milk
  • 1 tsp pure vanilla extract
  • 1 3/4 C old-fashioned rolled oats
  • 1/2 C chopped, sweetened dried cranberries
  • 1/2 C chopped walnuts
Notes: -Safflower oil (cuz that's what I had) -3/4 C carrot bagasse + 1/4 tsp Stevia -1/2 C soy milk (cuz the bagasse soaks up a lot of liquid) -400 F (by accident)

(July 11). I tried to make these diabetic friendly, and succeeded somewhat. The lack of sugar means they won't spread, so they end up looking like tiny drop biscuits.

Lee, they're tagged as Stevia, so that would be my guess. ;)

Aha. I guess my comments were too unspecific. Yes, Jayme, thank you, I used Stevia. A bit too unsweet for my taste, but diabetic boyfriend loved them, so they'll stay that way. The dried cranberries I have are extremely sweet, so I guess that compensates. :)
