What's a coconut creme pie, really? It's a pie crust filled with pastry cream and whipped topping. I didn't make the chocolate crust, only because I wanted coconut to be the star of this pie. The filling was easy enough to make, but didn't have enough coconut flavor. Fortunately, I have a bottle of Lorann Coconut Flavor, which helped.
