A hearty, delicious vegetarian stew. It's very adaptable--the only ingredients I measure closely are the spices, and I usually add more beans, squash and corn. The recipe calls for Christmas Lima beans (which I have not been able to find dried in Edmonton) but suggests kidney, pinto, black or Swedish brown beans as alternatives; we use pinto.
It also freezes well so I always put some away for quick lunches.
