This is the first recipe I've made from my copy of Vegetable Literacy that I got awhile back with part of my Amazon Gift Card I received from My Points. It's called Comforting Tomatoes in Cream with Bread Crumbs and Smoked Salt. Unfortunately I didn't have smoked salt so I used pink salt instead. The recipe is for one but I made two of them for my son and I since hubby didn't want to try it. It turned out delicious.
