I wish I could find real wild boar but used ground pork and ground turkey instead. I would have used the suggested ground venison in place of part of the boar but daughter doesn't eat venison or beef. I also replaced the beef stock with chicken (same reason as before). Since I didn't have Wondra flour I used cake flour for frying the sage and shallots (replaced the shallots with red onion, since shallots are so pricey here). This is a great dish for a cold lazy Sunday since it cooks a long time....
