A bad flavor permeated this dish. Not sure why, but we accidentally added extra garlic (6 instead of 4 cloves). The potatoes are first boiled, and then a paste of garlic, cilantro mint leaves, ginger were added to the potatoes, and a bit of boiling water to make it a bit soupy. None of us liked this at all, and the leftovers were (sadly) discarded. I really hate wasting food, but this was not salvageable.

Strange. Maybe did the garlic have green bits in the center? This can be bitter. Otherwise it sounds like standard stuff. Too much garlic isn't really going to hurt.
Understand about wasting food. Such a waste. ;-)

Yea, I don't think it was the garlic either, and I didn't notice those green shoots (though it was smashed, so they could have snuck in). Could cooking the cilantro do it? I usually add it at the end, and here its cooked for a while after the addition.

Cooked cilantro is kind of flavorless, maybe vaguely green tasting, as far as I can remember.
Rancid oil perhaps??? Although your description doesn't sound like oil was used.

There was a bit of oil used, but the same oil for all components of the dinner. After your comment, I did give it the sniff test - its only 2 or 3 months old, and smelled just fine.
Maybe this will just be one of those unsolved mysteries.
