Very nice side--great forThanksgiving as it can be made a day or two before and then finished off with its simple topping just before service.

If you add finely chopped (use the food processor) cooked cauliflower, then you've got Stephanie Alexander's cauliflower and potato "pie". I serve it with stews and braises.
