Pasta Pentimento

Half recipe for our main meal -- an instant favorite. A big hit. This is in Feibleman's part, in a little section titled "Food of a Hospital Patient", foods he would bring Hellman when she was in the hospital.

The recipe calls for vermicelli, which I think is a short little pasta. I served with spaghettini instead.

Simple sauce of minced anchovies*, garlic, sun-dried tomatoes, simmered in olive oil along with pepper flakes and black pepper. The sauce is tossed with the pasta and Parmesan before serving. Yum.

• I am not an anchovy person. Yuck. But this is one of those recipes where the minced fish melts into the sauce. The overly fishy smell/taste disappears leaving a delicious savory taste behind. Surprising and wonderful.
