Probably because the recipe called for water rather than stock, we found it a little bland. And it lacks the natural sweetness of traditional French onion soup. Will doctor up leftovers for dinner tomorrow, and see if that works, because the Gruyère toasts deserve a better dipping soup.

Better day two, after we roasted up some mushrooms left over from another dish and some garlic cloves, and tossed them into the mix.
