Basically, the vinaigrette and chopped eggs … always a winner. But I don’t think simmering the leeks 6-8 minutes was enough. Indeed, we just about doubled it to 12 minutes, but still tough. Mostly, it just ended up looking and tasting like stringy water-logged leeks (maybe just a not great bundle of leeks) … and we did give them what felt like enough time to dry. I think steaming is the way to go here. There are better recipes for this dish out there.
