Lots of flavor for minimal effort -- the title of the recipe says it all. Because it is so simple, the pay-off comes when you use the best ingredients. I did lightly pound the breasts after butterflying to make it easier to stuff each breast.

Started with ciabatta and EVOO for dipping, then the chicken with a side salad of mixed lettuces, shaved zucchini and olives with a lemony vinaigrette. A crisp Italian (or even NZ) white is perfect with this.
